Normally produced with olives mainly of the Correggiolo variety from the mid-October harvest. The climatic characteristics and the incomplete state of ripeness of the harvest period give this oil aromatic notes appreciated by all lovers of strong flavours.
This oil is exquisite with dishes with a complex and elaborate taste-olfactory structure such as legume soups, vegetable soups, red meats, roasts, bruschetta, mature cheeses, salads and wild vegetables.
