Produced from moderately ripe olives, harvested in October and November. The climate and the state of ripeness of the olives give this oil a balanced and pleasant flavour suitable for all palates.

It is successfully combined with all typical dishes of Italian cuisine and the famous Mediterranean diet, such as tomato sauce.
